Grilled chicken with mango and avocado salsa

INGREDIENTS:

Salsa

  • 2 cups diced mango
  • 1 avocado, diced
  • 1 cup chopped cilantro
  • 1/2 cup diced red onion
  • 2 Tbsp. lime juice

Chicken

  • 4 Chicken Breasts
  • 2 Tbsp. olive oil
  • Salt and black pepper

DIRECTIONS:

Salsa

  1. In a medium bowl, you must combine all the ingredients. After done, set aside for later.

Chicken

  1. Begin by brushing the chicken on both sides with olive oil. Followed by that, you need to season the chicken with salt and pepper to add some taste.
     
  2. After having prepared your chicken, you must preheat your grill or grill pan on a medium-high surface. Proceed to cook the chicken for about 5 minutes on each side (or until the internal temperature of the chicken reaches 165°). It is also possible to cook the chicken on a BBQ.
     
  3. Finally, remove the chicken and allow it to cool down for 5 minutes. After that it’s ready to eat! Simply top it off with the salsa you made in the beginning.
