How to Clean and Protect the Wood

A cutting board for restaurant use (whether it is for preparing or serving food) must be washed and dried properly to maintain its usage. Wood cutting boards should never be washed in a dishwasher. Instead, they should be hand washed in warm soapy water and patted dry. Extra attention should be made to cuts and grooves in the board. For extra protection, consider using an oil or wax treatment to the wood cutting boards. This will prevent water and other liquids from being absorbed into the wood, keep food particles out, and prevent germs and growth of mold.

Replace Cutting Board Periodically

Wood cutting boards should be replaced regularly. Excessive use will wear a board down. It may develop cracks or deep grooves that get difficult to clean. At this point, it’s time to replace them. If you’re unsure, just throw it out. It is better to keep your customers safe than be sorry.
